Balcones Cataleja is a Texas single malt released for the Waco distillery's 15th anniversary, made from Golden Promise barley, matured in ex-bourbon barrels, and finished in decommissioned sherry solera casks that held Moscatel, Amontillado Dulce, Oloroso, and Palo Cortado. Bottled at 59% ABV, it leans heavily on the sherry, with dried fruit, fig, and oxidized-wine depth over the malt.
